For the galette:
1 sheet puff pastry (8–9 oz), thawed but cold
2-3 medium hard pears
3 tablespoons unsalted butter
¼ cup light brown sugar
1 tablespoon cornstarch
¾ teaspoon cinnamon
1 teaspoon vanilla extract
1 teaspoon lemon juice
Pinch of salt
For the golden crust:
1 egg
1 tablespoon milk (or water)
1 tablespoon coarse sugar (optional)
For serving:
1 tablespoon apricot preserves
Vanilla ice cream
Instructions:
Brown the butter in a saucepan over medium heat until golden and nutty, about 3–5 minutes; let cool.
Thinly slice the pears and toss with brown sugar, cornstarch, cinnamon, vanilla, lemon juice, salt, and 2 tbsp brown butter.
Roll the puff pastry and cut an 11-inch circle on parchment paper.
Arrange the pears in a circle, leaving a 1-inch border.
Fold the pastry edges over the pears and drizzle the remaining brown butter over the pears.
Brush the crust with egg wash and sprinkle with coarse sugar.
Bake at 400°F for 30–35 minutes, until golden and flaky.
Cool for 10–15 minutes, brush the pears with warm apricot preserves, and serve with vanilla ice cream and pecans! Enjoy!
