Earth Day Smoothie

Sip the colors of Earth Day! Layers of fresh greens, tropical fruit, and creamy goodness come together in this feel-good blend—made entirely with ingredients from the Boise Co-op.

Step 1: Make the Green Smoothie (the “earth layer”)

Ingredients:

  • 1 cup spinach 

  • 1 cup water or coconut milk

  • ½ cup frozen pineapple 

  • ½ cup frozen mango 

  • 1 banana 

Instructions:

  • Blend everything until smooth.

Step 2: Make the Blue Smoothie (the “sky”)

Ingredients:

  • 2 cups Greek yogurt 

  • 1–1½ teaspoons blue spirulina 

  • 2 frozen bananas 

  • 2 cups frozen pineapple 

  • 2 cups frozen mango 

Instructions:

  • Blend until thick and creamy—this layer should be scoopable.

Step 3: Make the Clouds

Ingredients:

  • Plain yogurt (thick works best!) 

Step 4: Assemble Your Cloud Cup

  1. Pour the green smoothie into a clear glass (fill about 1/4 way). 

  2. Add clouds: Spoon small dollops of plain yogurt along the inside of the glass so they look like floating clouds. 

  3. Top with blue smoothie: Gently spoon or pour the blue layer on top.

Enjoy with a sprinkle of chia seeds.
