Stuffed Acorn Squash

This Stuffed Acorn Squash is loaded with seasoned ground beef, refried beans, onions, and plenty of melty cheddar and mozzarella, then finished with all your favorite taco toppings.

Ingredients:

  • 2 medium acorn squash

  • 1 lb ground beef

  • 1 can (16 oz) refried beans

  • ¼ cup chopped onion

  • 1 packet taco seasoning

  • 1–2 cups shredded cheddar cheese

  • 1–2 cups shredded mozzarella cheese

  • Olive oil

  • Salt + black pepper

Optional toppings: 

  • Diced tomatoes, shredded lettuce, avocado, cilantro, sour cream, salsa, sliced olives or jalapeños.

Instructions:

Preheat oven to 400°F. Cut each acorn squash in half and scoop out the seeds.

Brush the squash with olive oil and season with salt and pepper. Place cut-side down on a baking sheet and roast for 25–30 minutes, or until almost fork-tender.

Meanwhile, cook the ground beef and onion in a large skillet over medium heat until the beef is browned. Drain excess grease.

Stir in the taco seasoning and refried beans. Add a small splash of water if needed and stir until everything is combined and heated through.

Add half of the cheddar and mozzarella to the beef mixture and stir until the cheese melts into that warm, creamy burrito filling.

Flip the roasted squash over and generously spoon the cheesy beef and bean filling into each half.

Sprinkle the remaining cheddar and mozzarella over the tops.

Return to the oven and bake for another 10–15 minutes, until the squash is tender and the cheese is melted and bubbly.

Finish with all your favorite taco toppings and DIG IN!
